2 tablespoons tapioca starch (or cornstarch)
3 large eggs
3/4 cup (150g) granulated sugar
2/3 cup (160ml) water
1/2 cup (120ml) evaporated milk
1 teaspoon vanilla extract
2 tablespoons vegetable oil
Cooking spray or melted butter (for greasing the waffle iron)
For the Mousse
1 cup (240ml) heavy cream
2 tablespoons (25g) granulated sugar
1 1/2 scoops (about 50g) Boba Tea Protein Taro Milk Tea Whey Protein
1 teaspoon vanilla extract
INSTRUCTIONS
For the Waffles
- Prepare the Dry Ingredients:
- In a large mixing bowl, sift together the all-purpose flour, baking powder, custard powder, and tapioca starch.
- Prepare the Wet Ingredients:
- In a separate bowl, whisk together the eggs and granulated sugar until the mixture is pale and slightly thickened.
- Add the water, evaporated milk, vanilla extract, and vegetable oil to the egg mixture, and whisk until well combined.
- Combine Ingredients:
- Gradually add the dry ingredients to the wet ingredients, whisking continuously to form a smooth batter. Be careful not to over mix to avoid tough waffles.
- Cover the batter and let it rest for about 15-20 minutes. This helps to develop the texture of the waffles.
