Characterized by their unique bubble-like appearance, these waffles are crispy on the outside and soft on the inside. This version includes a taro-flavored mousse filling, adding a creamy and slightly sweet flavor, making it a delightful treat. The mousse is enriched with taro milk tea whey protein, making it not only delicious but also a source of protein. Perfect for a fun and tasty dessert experience, these waffles can be enjoyed plain or with your favorite toppings.

INGREDIENTS

For the Waffles
1 cup (125g) all-purpose flour
1 teaspoon baking powder
1 tablespoon cornstarch
2 tablespoons tapioca starch (or cornstarch)
3 large eggs
3/4 cup (150g) granulated sugar
2/3 cup (160ml) water
1/2 cup (120ml) evaporated milk
1 teaspoon vanilla extract
2 tablespoons vegetable oil
Cooking spray or melted butter (for greasing the waffle iron)

For the Mousse
1 cup (240ml) heavy cream
2 tablespoons (25g) granulated sugar
1 teaspoon vanilla extract

INSTRUCTIONS

For the Waffles

  1. Prepare the Dry Ingredients:
    • In a large mixing bowl, sift together the all-purpose flour, baking powder, custard powder, and tapioca starch.
  2. Prepare the Wet Ingredients:
    • In a separate bowl, whisk together the eggs and granulated sugar until the mixture is pale and slightly thickened.
    • Add the water, evaporated milk, vanilla extract, and vegetable oil to the egg mixture, and whisk until well combined.
  3. Combine Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, whisking continuously to form a smooth batter. Be careful not to over mix to avoid tough waffles.
    • Cover the batter and let it rest for about 15-20 minutes. This helps to develop the texture of the waffles.
  4. Preheat the Waffle Iron:
    • Preheat your egg waffle iron according to the manufacturer’s instructions. Once hot, lightly grease both sides with cooking spray or melted butter.
  5. Cook the Waffles:
    • Pour enough batter into the waffle iron to cover the bottom plate. Close the iron and immediately flip it over.
    • Cook for about 2-3 minutes on each side, or until the waffles are golden brown and crispy.
    • Carefully remove the waffle from the iron and let it cool slightly on a wire rack. The waffles should be crispy on the outside and soft on the inside.
  6. Serve:
    • Serve the egg waffles warm. They can be enjoyed plain or with a variety of toppings like powdered sugar, fresh fruit, ice cream, whipped cream, or syrup.

    Taro Mousse Filling

    1. Whip the Cream:
      • In a large mixing bowl, whip the heavy cream with an electric mixer until it starts to thicken.
      • Gradually add the granulated sugar and continue whipping until soft peaks form.
    2. Add the Protein Powder:
      • Add the Boba Tea Protein Taro Milk Tea Whey Protein and vanilla extract to the whipped cream.
      • Continue whipping until the mixture forms stiff peaks. Be careful not to over-whip, as this can cause the cream to become grainy.
    3. Chill:
      • Cover the bowl with plastic wrap and refrigerate the mousse for at least 1 hour to allow it to set.
    4. Serve:
      • Once the mousse is ready, use it to fill or top your Hong Kong style egg waffles. You can use a piping bag to neatly pipe the mousse onto the waffles, or simply spoon it on.
