What better way to celebrate a birthday than a four layer cake! This can be made with any Boba Tea Protein Whey Protein. We suggest making it with alternating layers of Taro and Jasmine.

INGREDIENTS
- NOTE: This is for one layer.

Dry Ingredients:
- 3/4 cup Boba Tea Protein Whey Protein
- Suggested: Taro Milk Tea or Jasmine Milk Tea
- 1/4 cup coconut flour
- 1 tbsp cornstarch or arrowroot
- 2 tsp baking powder
- 1/2 cup powdered erythritol (sweetener)
- Pinch of salt
- 3/4 cup Boba Tea Protein Whey Protein

Wet Ingredients:
- 3 large eggs, separated
- 2 tbsp melted butter (cooled)
- 2 tbsp Greek yogurt
- 1/2 cup almond or dairy milk
- 1 tsp vanilla extract
- 1 tsp vinegar or lemon juice + 1/4 tsp baking soda (optional, for extra fluff if using yogurt)
INSTRUCTIONS
- This is for one layer. Repeat for additional layers.
- Prep Oven and Pan: Preheat the oven to 320°F (160°C). Line an 8-inch round pan with parchment and lightly grease.
- Mix Dry Ingredients: Whisk all dry ingredients in a large bowl.
- Mix Wet Ingredients: In another bowl, whisk together egg yolks, melted butter, Greek yogurt, milk, and vanilla (plus vinegar/lemon and baking soda if using).
- Whip Egg Whites: Beat egg whites until stiff peaks form.
- Combine: Add wet ingredients to dry and mix gently until just combined.
- Fold In Egg Whites: Gently fold whipped egg whites into batter with a spatula.
- Bake: Pour batter into pan and smooth the top. Bake for 28–35 minutes until golden and springy.
- Cool and Serve: Let the cake cool. Top with whipped cream, yogurt glaze, or a drizzle of brown sugar boba syrup if you like!
