Matcha Protein Ice Cream Sandwiches

INGREDIENTS

  • 1 container (about 8 oz) of coconut whip (or any whipped topping)
  • 2-4 scoops of Boba Tea Protein Matcha Latte Whey Protein
  • 6 graham crackers (use honey-flavored or plain for contrast with matcha)
  • 3/4 cup white chocolate chips (melted)


INSTRUCTIONS

  1. Melt white chocolate in 30-second microwave intervals, stirring until smooth.
  2. Line a small baking dish with parchment paper and place 3 graham crackers inside.
  3. Spread a thin layer of melted white chocolate over the crackers and freeze for 5–10 minutes.
  4. In a bowl, mix coconut whip with Matcha Latte Whey Protein until smooth.
  5. Spread the matcha mixture over the chilled chocolate layer.
  6. Top with 3 more graham crackers and press gently.
  7. Freeze for 1 hour, slice into squares, and enjoy! Store extras in the freezer.
