High-Protein Vietnamese Coffee Mug Cake

Ingredients

1 scoop of Boba Tea Protein Vietnamese Coffee

1 tbsp. of coconut flour

1/2 tbsp. of all-purpose flour

1/2 cup of unsweetened almond milk

1/2 cup of egg whites 

50 g (1/4 cup) of Tapioca Pearls (cooked - instructions here)

Topping of choice - whipped cream, icing, etc.

Instructions

  1. In our shaker bottle, combine all dry ingredients first (protein powder, coconut flour, and all-purpose flour).

  2. Then pour liquid ingredients in shaker bottle (1/2 cup of milk and 1/2 cup of egg whites).

  3. Vigorously shake ingredients in the shaker bottle until mixed well.

  4. Grab your favorite microwave-safe mug and lightly coat the inside with some cooking oil to prevent mixture from sticking. 

  5. Pour mixture into the mug.

  6. Add a tablespoon of cooked boba into mixture and stir.

  7. Microwave your mug for 1:30 - 2 minutes. The time will vary depending on your microwave, but check your mug to see if it's fully cooked in 10-15 second increments after 1 minute.

  8. Take your mug out and let it sit for 1 minute.

  9. Top off your mug with cooked boba and whipped cream or icing.

  10. Grab a spoon, dig in, and enjoy!
