Matcha Donut Holes


Light, fluffy, and subtly sweet, these high-protein matcha donut bites give you that nostalgic donut-shop flavor with a big hit of protein and very low sugar. Perfect for breakfast, post-workout, or an afternoon snack with your coffee or matcha latte.

Ingredients

 

Equipment You’ll Need

  • Mixing bowl

  • Whisk or fork

  • Spatula

  • Small bowl of water

  • Air fryer

  • Parchment paper

 

Instructions

1. Prep & Preheat

  • Preheat your air fryer to 325 deg F.
  • Line the bottom of the air-fryer basket with parchment paper if needed.

2. Stir (2 minutes)

  • In a mixing bowl, whisk together all the dry ingredients until there are no lumps of flour or protein powder.
  • Add the wet ingredients to the bowl.
  • Whisk or stir until just combined – you want a smooth batter but don’t overmix.
  • Scoop approximately 1 tablespoon of dough (25-27g) and place on parchment paper.
  • Quickly shape the batter in your hands and continue to re-wet them in the water so it doesn’t stick.

3. Cook (9-10 minutes)

  • Place the parchment with the donut bites into the preheated air fryer basket. Don’t overcrowd, may need 2 batches)
  • Air fry for around 6–8 minutes, or until the donuts have risen, the tops are set, and the edges are nicely browned.
  • Let the donuts sit in the pan for a couple of minutes, then carefully remove and transfer to a cooling rack.
  • They will firm up slightly as they cool, while staying soft and cakey inside.

 

Pro Tips for Perfect Results

Don’t Overmix

Stir the batter only until it’s just combined. Overmixing can make your donut bites dense instead of soft and fluffy.

Keep Hands Wet

The dough is intentionally very sticky. Wet hands are the secret to easy shaping.

Temperature Matters

Every air fryer runs differently. If your first batch browns too quickly, lower the temperature slightly and cook a minute or two longer.

Adjustments

If your dough it too dry or crumbly, add water or milk 1 teaspoon at a time until it forms a soft, manageable (but still sticky) dough. Greek yogurt brands vary in moisture level so adjustments are normal
